Bacteria acidify the milk and play a role in defining the texture and flavor of most cheeses. Some cheeses also feature molds, either on the outer rind or throughout.
A Distilled spirit is an unblended product of a single distillery. It may be a general product of a distillery, a product line, or a specific bottling.

By altering the production method (changes in time and temperature, for example) or the ingredients, a staggeringly wide variety of different types of beer can be produced. Much like fine wines, many beers can also be aged and evolve into beverages that defy the common definitions of beer.
